●Ingredients●
1) 5 ounces lean ground beef
2) 1 tablespoon and 1 tsp chopped onion
3) 1 tablespoon and 1 tsp chopped green bell pepper
4) 1/8 tsp garlic powder
5) 1/4 tsp prepared yellow mustard
6) 1/4 cup ketchup
7) 1 tsp brown sugar
8) salt & pepper


●Directions●

1. In a medium skillet over medium heat, brown the ground beef, onion, and green pepper, drain out liquids.

2. Stir in the garlic powder, mustard, ketchup, and brown sugar, mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper to taste.

●Ingredients●
1) 2 pounds russet potatoes, peeled & cubed
2) 1 cup 1% milk
3) 4 ounces shredded mozzarella cheese
4) 3 tablespoons grated Parmesan cheese, divided
5) 2 eggs
6) 3 (6 ounce) cans chunk light tuna in water
7) 1/2 cup chopped green onion


●Directions●

1. Preheat oven to 200 C (400F).

2. In a large pot over high heat, place the potatoes with water to cover and bring to a boil. Let boil for about 20 minutes, or until potatoes are tender. Drain and transfer potatoes to a large bowl. Add the milk, mozzarella cheese and 2 tablespoons of the Parmesan cheese.

3. Using an electric mixer, beat the potatoes until almost smooth. Then beat in the eggs, drain the tuna and stir the tuna into the potato mixture. Stir in the green onion and season with salt and pepper to taste.

4. Transfer mixture to a lightly-greased 10 inch glass pie dish and top wit the remaining Parmesan cheese.

5. Bake for approximately 45 minutes or until golden brown.

●Ingredients●
1) 2 cups all-purpose flour
2) 1 tsp baking soda
3) 1/4 tsp salt
4) 1/2 cup butter
5) 3/4 cup brown sugar
6) 2 eggs, beaten
7) 2 1/3 mashed overripe bananas
8) 1/2 cup all-purpose flour
9) 1/2 white sugar
10) 1/2 cup butter


●Directions●

1. Preheat oven to 175 C (350F). Lightly grease a 9x5 inch loaf pan.

2. In a large mixing bowl, combine flour, baking soda and salt. In another bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture, stir just to moisten. Pour batter into loaf pan.

3. Bake in oven for 60-65 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

●Ingredients●
1) 1 1/2 cups all-purpose flour
2) 1/2 cup vegetable oil
3) 2 tablespoons cold milk
4) 1 1/2 tsp white sugar
5) 1 tsp salt
6) 6 Fuji apples, cored and sliced
7) 3/4 cup white sugar
8) 3 tablespoons all-purpose flour
9) 3/4 tsp ground cinnamon
10) 1/2 tsp ground nutmeg
11) 1/2 cup all-purpose flour
12)1/2 white sugar
13) 1/2 cup butter


●Directions●

1. Preheat oven to 175 C (350F).

2. To make crust: In a large mixing bowl, mix together 1 1/2 cups flour, oil, milk, 1 1/2 teaspoons sugar and salt until evenly blended. Pat mixture into a 9 inch pie pan, spreading the dough evenly over the bottom and up the sides. Crimp edges of the dough around the perimeter.

3. To make pie filling: Mix together 3/4 cup sugar, 3 tablespoons flour, cinnamon, and nutmeg. Sprinkle over apples and toss to coat. Spread evenly in unbaked pie shell.

4. To make top crust: Using a pastry cutter, mix together 1/2 cup flour, sugar and butter until evenly distributed and crumbly in texture. Sprinkle over apples.

5. Put pie in the oven on a cookie sheet to catch the juice that may spill over.

●Ingredients●
1) 1 cup butter
2) 1/2 cup white sugar
3) 1 cup packed brown sugar
4) 1 tsp vanilla extract
5) 2 eggs
6) 2 1/2 cups all-purpose flour
7) 1 tsp baking soda
8) 1 tsp salt
9) 2 cups semisweet chocolate chips


●Directions●

1. Preheat oven to 190 C (375F).

2. In a large mixing bowl, cream together the butter and sugar until smooth. Beat in the eggs and vanilla one at a time. Combine the flour, baking soda nd salt, stir into the sugar mixture. Mix the chocolate chips in evenly. Drop by tablespoonfuls onto ungreased cookie sheets.

3. Bake for 8-10 minutes or until edges are golden. Remove from baking sheet and cool on wire racks.

1) 1 pound confectioners' sugar
2) 1/2 cup peanut butter
3) 1/2 cup unsweetened cocoa powder
4) 6 tablespoons milk
5) 2 tsp vanilla extract


●Directions●

1. Line an 8 x 8 inch square pan with wax paper.

2. Combine the confectioners' sugar, peanut butter, cocoa, milk and vanilla together and mix until smooth.

3. Chill until firm, then cut into squares.

●Ingredients●
1) 1 cup butter/margarine
2) 1 1/4 cups white sugar
3) 1 egg
4) 3 ripe bananas
5) 1 tablespoon instant coffee granules
6) 1 tsp. vanilla extract
7) 2 1/4 cups of all-purpose flour
8) 1/4 tsp salt
9) 1 tsp baking powder
10) 1 tsp baking soda
11) 1 cup semisweet chocolate chips


●Directions●
1. Preheat oven to 175 C (350F).

2. Blend butter or margarine, banana, coffee, egg, sugar, and vanilla extract in food processor for 2 minutes. Add baking powder, soda, flour, salt and blend just until flour disappears. Add chocolate chips and mix in with wooden spoon. Spoon mixture into paper lined muffin cups.

3. Bake for 25 minutes. Cool on wire racks.

●Ingredients●
1) 1 1/2 cups raisins
2) 1 1/2 cups all-purpose flour
3) 3/4 cup white sugar
4) 2 teaspoons baking powder
5) 1/2 cup butter, cubed
6) 1 tsp baking soda
7) 2 eggs, beaten
8) 1 pinch salt
9) 1/2 cup milk
10) 1/2 cup chopped walnuts
11) 1 tsp. vanilla extract
12) 1/4 cup real maple syrup

●Directions●
1. Place butter, eggs, milk, raisins, sugar, and vanilla in a large heavy-bottomed sauce pan. Cook over medium heat, stirring frequently until mixture is hot, slightly thickened and just beginning to bubble about 4-5 minutes. Cool slightly, uncovered in the refrigerator.

2. Preheat oven to 190 C (375F). Grease 12 muffin cups with butter or cooking spray.

3. Stir flour with baking powder, soda, and salt in a large mixing bowl. Make a well in center and pour in warm raisin mixture, stirring until combined only. Stir in nuts until evenly mixed. Spoon batter into muffin cups.

4. Bake in the center of the oven until golden and a fork in the center of the muffin comes out clean, about 15-17 minutes. Remove from oven and immediately pour about 1 tsp. of syrup over each muffin. Cool muffins in cups for 10 minutes, then place on a rack. Serve warm.
