●Ingredients●
1) 1 1/2 cups raisins
2) 1 1/2 cups all-purpose flour
3) 3/4 cup white sugar
4) 2 teaspoons baking powder
5) 1/2 cup butter, cubed
6) 1 tsp baking soda
7) 2 eggs, beaten
8) 1 pinch salt
9) 1/2 cup milk
10) 1/2 cup chopped walnuts
11) 1 tsp. vanilla extract
12) 1/4 cup real maple syrup
●Directions●
1. Place butter, eggs, milk, raisins, sugar, and vanilla in a large heavy-bottomed sauce pan. Cook over medium heat, stirring frequently until mixture is hot, slightly thickened and just beginning to bubble about 4-5 minutes. Cool slightly, uncovered in the refrigerator.
2. Preheat oven to 190 C (375F). Grease 12 muffin cups with butter or cooking spray.
3. Stir flour with baking powder, soda, and salt in a large mixing bowl. Make a well in center and pour in warm raisin mixture, stirring until combined only. Stir in nuts until evenly mixed. Spoon batter into muffin cups.
4. Bake in the center of the oven until golden and a fork in the center of the muffin comes out clean, about 15-17 minutes. Remove from oven and immediately pour about 1 tsp. of syrup over each muffin. Cool muffins in cups for 10 minutes, then place on a rack. Serve warm.
